Located on Caroline Street in between Hanover and George, Soup & Taco Etc. is definitely in my Top 5 favorite Fredericksburg eateries. Please go there if you haven't already. Once your eyes adjust to the long, narrow hall saturated in bright-green paint, you'll feel right at home.
I heard somewhere that it's run by the same folks who brought us Jake & Mikes a few years back, which would explain its spectacular, creative food. What sets Soup & Taco aside from its competitors downtown in the cheap-eats category is its simplicity. There's soup ... and there's tacos. I think they've also added taco salads and burritos to the menu, but it's pretty basic. I recommend the Chicken Tacos, which are about $7 for two. (I should mention that these aren't your run-of-the-mill tacos. Oh, no. Each taco consists of: two small flour tortillas held together by a layer of some kind of jack cheese; chicken -- or steak, veggies, fish, etc. -- in an awesome marinade; cabbage salad -- which sounds gross but isn't; and salsa. Lime on the side. They're a little spicy, and a lot droolworthy.)
Take note of the bizarre beverage options at S&T -- they have grape soda and RC Cola and all kinds of other unexpected products you certainly can't find at Bennigan's or wherever. Plus, they're Open. At. Night. (Collective gasp!) If you live here in Fredvegas, you know that dinner options are oddly limited, while lunch choices seem endless. The town shuts down at 5, and you're stuck spending $45 on an entree at Claiborne's, or microwaving a Lean Cuisine. Bah.
In short, Soup & Taco is a place I hope will be a Fredericksburg staple for years to come. It's cheap, it's delicious, and it's original. My one complaint? They're closed on Sunday and Monday. But if I can get Soup & Taco only five days a week, I guess that's OK.

If Soup & Taco were in Washington, it would be at the top of the list for Cheap Eats, no doubt about it. Best tacos I've ever had...friendly service. The cilantro rice & refried beans were amazing.
